Dishes are not part of a move-out clean. Washing them is a $40 add-on, so nobody pays for it who did not ask. If there is a sink full waiting, add it to the booking. Organizing is separate too: if you want things sorted and put away rather than cleaned around, it is available and it changes the price, so say so when you book.
